Noodle Kugel
Here's is Grandma Doreen's recipe for noodle kugel:
12 oz package flat egg noodles
butter
16 oz cottage cheese (can be low fat)
2 eggs
milk
vanilla
salt
1/4 c. sugar
2 kids packages of raisins
ground cinnamon
Boil the noodles until al dente, about 6 minutes. Preheat oven to 350° and butter a 9x13 inch baking pan. Beat eggs until frothy. Add a little milk, like for scrambled eggs. Add vanilla, salt and sugar to taste. Beat. Add cottage cheese and raisins and mix well. When noodles are done, drain them and put them in the baking pan. Pour the egg mixture over them and mix well. Sprinkle the top with cinnamon. Bake for 40 minutes,

Basic Cheesecake
(makes 2)
Preheat oven to 350
2 graham cracker pie crusts
4 - 5 eggs
Zest & juice of 1 - 2 lemons
pinch of salt
1 Cup sugar Vanilla extract
2 - 8oz pkgs. cream cheese
Combine cream cheese, sugar, salt, vanilla & lemon juice in a bowl. Add eggs one at a time, mixing well after each addition (I use a whisk). Pour into crusts and bake 45 - 50 min., or until inserted knife comes out clean.
Make a topping by blending 2 cups (16 oz) sour cream, 1/3 cup sugar, and vanilla and spread over the cake. Bake for another l5 minutes. Cool, then refrigerate for a couple hours. The truly decadent may add a fruit topping at this point, or a thick lemon sauce, or some damn thing. Eat it!
Lemon Topping
1/2 cup sugar
4 Tbls lemon juice
2 Tbls cornstarch
pinch of salt
2 Tbls butter or something
1 cup boiling water
1/3 small packet unflavored gelatin
Sprinkle gelatin over 1/4 cup cold water or lemon juice & set aside. Mix sugar and cornstarch in a small saucepan. Add water and boil 5 minutes, stirring constantly. Remove from heat; add butter, lemon juice and salt, stirring. Microwave gelatin for 40 seconds, until clear, and add to sauce.
Pour over cooled cheesecakes and refrigerate until set.
