Enchilada Pie
Cedarlane Three-Layer Enchilda Pie goes down pretty good with my family. It's a little spicy for our youngest, but she will usually eat it, and the rest of us like it very much. I just microwave it. I accompany it with some fruit, maybe a potato dish, and a salad.

i haven't seen Cedarlane brand before -- i'll have to keep my eyes peeled at our co-op. recently, i made a tamale pie with polenta -- it was better the next day inside tacos! i did a google search and found you at the top -- you are very similar to my blog (when we're not on vacation!!)
